Weeknight Meals

Ok, so did it take anyone else a while to get back into the swing of life with school-age kids?  Man I was out of sorts last week!  BUT!  I did manage to meal plan a little last week and had some HITS as in Ed Sheeran hits (have you heard Perfect with Beyonce?!  LOOOVE!) and some MISSES like those poor New Orleans Saints tonight!  Holy smokes that was an incredible ending!

Here’s what went down in the Manos household last week for dinners:

Monday: Chicken Noodle Soup.  My daughter was getting over a cold so I made my throw together pot of Costco rotisserie chicken.  Saute chopped onion, 2 carrots, 2 celery, add chicken broth (6c.), some small noodles, season with a little dry oregano, S+P and cook till pasta is ready.  I served it with a loaf of Costco Whole Grain Seeded baguette and called it a night!

Tuesday: Slow-Cooker Korean Beef served with steamed broccoli and rice.  I have to admit, I was away at Bunko Tuesday so I didn’t get to taste this one fresh out of the pot.  My husband said it was just so-so.  I had it the next afternoon for lunch (the sauce had been rinsed down the drain by the clean up crew–not complaining–no sir-ey) and felt it was a little dry.  If I had the sauce I may have thought otherwise.  May try again…with upgraded beef (I used stew chuck from Costco).

Wednesday: Tortellini Soup (recipe follows).  This is a family recipe my mom passed down from her dear friend Claire Affrunti.  With all this rain this week, I was in the mood for a warm, hardy bowl of goodness.  This one did the trick.

Thursday: TACOS!  OMG, this was the BEST crock-pot tacos I have ever made!  Not too spicy, not too dry.  Just the perfect amount of seasoning!  I served it on corn tortillas, with shredded spinach, chopped tomatoes, fresh avocado, and a little shredded cheese.  I will be making this award-winning recipe again and again and again and…AGAIN!  It was excellente’!

Friday: this mama wasn’t cooking on Friday!!!  No way Jose!  We had lots of delicious leftovers in the fridge so we all heated up our favorites and said “Goodnight, Irene!”
